Creamy Tom Yum Ramen with prawn

Ingredients:

Grocery Shopping List:

·       1 lb. large river prawns (about 4) or jumbo shrimp in the shell, peeled and deveined or protein of your choice (see note)

·       4 cups of shrimp stock or low sodium chicken stock or water

·       2 cups white button, straw, oyster, or baby portobello mushrooms, cut into bite-size pieces

·       3-4 tbsp fish sauce (or 2 teaspoons salt if vegan)

·       4-5 tablespoon lime juice

 

SUYL Meal Kits:

 

·       1 cup of coconut milk (comes with SUYL meal kit)

·       ½ dried spice mix: Package#1 (comes with SUYL meal kit)

·       2 tablespoons spice blend powder: Package#2 (comes with SUYL meal kit)

·       2 packs gluten free ramen noodles (comes with SUYL meal kit)

·       ½ dried cilantro & green onion for garnish Package#3 (comes with SUYL meal kit)

 

Directions: Ramen Noodle preparation

1.       Have ready 4 large individual serving bowls. Half fill a pot or stockpot with water and bring to a boil. 

2.       Add the dried gluten free ramen noodles, stir to submerge and cook until they have softened (about 8 minutes). Taste a strand to make sure they are ready.

3.       Drain the cooked noodles through a large colander placed in the sink and rinse off all starchy liquid that clings to them with running tap water. Shake off the water then divide the noodles evenly among the bowls. Set aside.

 

 Directions: Curry soup

1.       In a 2-qt saucepan, bring the stock to a boil over high heat. When it is boiling, add half of spice mix: Package#1 (except dried chiles) then turn down the heat to medium heat and let the broth infuse for 2 minutes.

2.       Add the mushrooms, half of spice blend: Package#2. Then add fish sauce followed by the dried chiles from Package#1. Let it cook for 5 minutes.

3.       Lower the prawns into the soup then slowly add coconut milk and stir gently. The temperature will drop slightly at this point. So turn up the heat just enough to return the liquid to a gentle simmer. Within 2 minutes the prawns will turn to opaque. Remove the saucepan from the heat.

4.       Immediately ladle the soup over the ramen noodles, dividing it evenly. Top with prawns and sprinkle each serving with an equal amount of cilantro and green onion. Optionally, top each serving with an egg half or more.

5.       Add lime juice or fish sauce to taste and adjust as desired. Serve immediately. Enjoy and don’t forget to let us know how you like it!

 

Recipes Note: 

Recommended protein choices: Chicken thighs, seafood or tofu.

Tips: Evaporated milk can be substituted for this recipe for those who seek lower calories.
