Serve 4
Ingredients:
· 0.5 lb. ground pork (ground turkey or ground beef)
· 200 grams (1 cup) firm tofu, cut into 1-cm-pieces
· 8 oz. dried wide rice noodles (come with SUYL meal kit)
· 1 tablespoons spice blend (comes with SUYL meal kit)
· 2 tablespoons vegetable oil
· 4 tablespoons All-in-one stir-fried sauce (comes with SUYL meal kit)
· 1 tablespoon light or brown sugar
· 2-3 cloves garlic, sliced
· 1 cup total of mixed vegetables: king oyster mushrooms/ bell pepper/ broccoli or vegetable of your choice
· ½ cup Thai basil
· Dried Thai red pepper (comes with SUYL meal kit)
Directions: Noodle preparation
1. Half fill a pot or stockpot with water and bring to a boil. Add the dried rice noodles, stir to submerge and cook until they have softened through (about 8-10 minutes) Taste a strand to make sure they are ready.
2. Drain the cooked noodles through a large colander placed in the sink and rinse off all starchy liquid that clings to them with running tap water. Shake off the water and drizzle a bit of vegetable oil to avoid the noodles sticking in lumps. Set aside.
Directions: Stir-fried noodles
1. Heat the oil in a wok or a saucepan over medium heat. When the oil is hot, add the diced tofu and deep fry until the tofu turns gold color, immediately remove from the heat and set aside.
2. In the same wok or saucepan, add basil leaves and stir occasionally until the basil leaves turn crispy, then remove from the heat immediately. (About 2-3 minutes)
3. Add the left-over oil from deep fried tofu and basil leaf (About 2 tablespoons) to coat the wok or a fry pan. Add sliced garlic and stir until fragrant.
4. Add the ground pork or protein of your choice and stir until the pork is cooked through.
5. Add the noodles, All-in-one stir-fried sauce, sugar, mixed vegetables and dried Thai red pepper stir to mix. Sprinkle with SUYL spice blend.
6. Stirring occasionally, until the noodles soften and the sauce is absorbed. (about 5 minutes)
7. Taste for seasoning. Add sugar, All-in-one stir-fried sauce or SUYL spice blend if you need.
8. Remove the pan from the heat, Serve immediately.
Protein of choices
Ground turkey, ground beef or shrimps.
Substitute with fresh wide rice noodles: heat them in microwave to soften the noodles and cook.
Tips: to avoid excessive oil, Air-fryer is applicable for diced firm tofu.
